In the small winery located in Poboleda, the Priorat wines are vinified in steel tanks or in open barrels, depending on variety and plot. Find the ripest is an important and very personal decision, which depend on the different wines produced later. The choice is made in the vineyards, only with healthy and ripe grapes. So the different varieties harvested in small consignments that are vinified separately. That means a lot more work, but can go harvest after harvest learning about the behavior of each variety, experimenting and making decisions.
The aging is done in French oak barrels, using a maximum rate of 20% of new barrels. They work with different coopers, wood from different forests, large and toasted to provide strength and complexity to the wine.
Time in barrel depends on the variety, the type of wine made and the barrel itself. And the result is always a little surprise.
Finally they bottled without fining or filtration, to preserve the maximum the characteristics of each wine.
