Clos Dominic is a relatively small endeavor that was created by Dominic Bairaguet and her husband Paco Castillo , both are from Porrera, who fell in love with the landscape of Priorat and their wines. They started making wine in 2002 with a very limited equipment’: just had a couple of tanks and six barrels in the basement of their home that used to be a baker’s oven. Their current production cellar is in a building that’s been a cellar for the last 150 years in the village.
Dominic and Paco, along with their daughter Ingrid taking care of the enology duties, now produce about 13-15,000 bottles a year out of their seven hectares of vineyards. They make all the wines with natural fermentation.
Clos Dominic remains the same small winery of their beginnings a decade agio, but their products still receive high recognition from the wine critics .
